"The feuillete of asparagus tips under a puff pastry lid was expertly done ... the cream of white onion soup possessed intense flavour... a fillet of sea bass came with a side helping of tomato petals.
"Three main courses came with maltaise sauce, valrhona sauce and antiboise sauce, none of which, to the best of my knowledge, I’d ever encountered previously. There were lots of these touches, little bits of culinary business one never sees in the city.
